Tasting notes

Stone fruit — Hazelnut — Milk chocolate

For the 2nd year in a row we work with the coffee of Paulo Sérgio Carneiro Ribeiro. We are a real fan of this coffee and would like to share it with you both on filter and espresso. The farm is located in the Serra da Mantiqueira region, in Carmo de Minas, a city internationally recognized for its coffee tradition. Paulo Sérgio Carneiro Ribeiro is the owner and with over 40 years of farming experience, the family is committed to sustainable production focusing on quality. Fazenda Coqueiro hires workers to pick cherry using. Coffee is picked manually with a derriçadeira – a sort of mechanized rake that uses vibration to harvest ripe cherry. A tarp is spanned between coffee trees to capture the cherry as it falls and only ripe, red cherry is selected. Harvested cherry is brought to the farm’s on-site processing center.Cherry is laid to dry on patios. Drying is finished in a mechanical dryer to ensure even drying. Beans are bagged and stored in Carmo de Minas at COCARIVE’s warehouse before being milled and prepared for export.
