In the Yanesha language, “cowen” means “that’s good.” Produced by 3 farmers in the Oxapampa-Ashaninka-Yanesha Biosphere, the high-quality and climate-smart Cowen Natural lives up to its name.After selective hand harvest, farmers visually inspect cherry using color-reference cards from 7 Elements. Cherry is floated and ripe, red cherries are placed in a box overnight. In the morning, cherries are laid in a single layer on parabolic beds. Cherries are raked several times per day to ensure even drying. Depending on the weather, beds may be moved to the shade near the end of the drying process to slow drying to ensure moisture content. It takes an average of 8 to 15 days for cherry to dry. Cherry is rested for several weeks before being hulled and dry milled.
