Tasting notes

Big fruit acidity— Pomegranate —Syrupy mouthfeel

Jamie Cabrera Meneses owns the 15-hectare farm called La Mikay, where he has 9hectares planted with coffee, including Geisha variety. There are 4 hectares of thefarm reserved as forest preservation area. Jaime picks the coffee when it is brightred, depulping it using a traditional 5-outlet machine in the afternoon, and allowingthe coffee to ferment dry for 28 hours. He washes the coffee three times, then laysit out in parabolic dryers for 15–24 days.
Don Jaime says he's been a coffee farmer for more than 30 years, but in 2013 hefaced a very difficult time when more than half of his Caturra trees were destroyedby coffee-leaf rust. He planted Castillo variety at that time, as well as expanding hisselection of Geisha, which is the coffee he is focusing his attention on right now.
