Sweet Cherry — Apple — Milk Chocolate 

Kevin Naranjo cultivates Caturra and Catuai trees on his farm, Finca El Trapiche. Finca El Trapiche’s high altitudes of 1,800 to 1,900 meters above sea level provide the warm days and cool nights that help cultivate dense, sweet cherry. Cherry is selectively handpicked and brought to the farm’s on-site wet mill. At the wet mill, cherry is left to lightly ferment for 48 hours. Then, cherry is pulped in a mechanical demucilager that removes remaining mucilage while reducing water usage. Parchment is laid on raised beds to sundry. Parchment is raked frequently to ensure even drying. It takes approximately 10 days for parchment to dry.
